Fresh Sweet Tilapia with Mango Salsa

4oz. fresh tilapia
1/2Tbs. mango, diced
1/2Tbs. tomato, diced
1/2Tbs. red bell pepper, diced
1/2Tbs. onion, diced
1/2Tbs. cucumber, diced
1tsp. fresh cilantro, finely chopped
1/2tsp. cayenne powder
1tsp. honey
1/2Tbs. olive oil
1/2tsp. black pepper
1 lime, squeezed
1/2 cucumber, sliced
1/4 cup green onions, chopped

Combine oil, honey, cayenne powder, pepper and half of the lime juice together in a bowl. Brush over tilapia. Have extra time? You can place the fish in a ziploc bag with this mixture and place it in the fridge to marinate.

Once marinated, wrap fish in foil and broil for 10-15 minutes. Remove from the broiler and peel back the foil. Cut into the fish to make sure it’s cooked all the way through.

Mix veggies and mango together with the remaining lime juice.

When fish is cooked remove from foil, top with salsa and serve on top of a bed of cucumber and green onions.
