B’s TIU Inspired Buddha Bowl

1 bag Alexia’s frozen sweet potato fries (use 1/5 of bag per bowl**)
2 cups arugula or kale
1/4 tsp crushed red pepper
1/2 tsp minced garlic (more if you like the taste!)
1/2 tsp onion powder (sometimes I love to add chopped red onion instead)
1/4 cup sprouts
1/4 cup edamame
1/4 avocado
1/3 cup Hilary’s frozen millet medley (cooked quinoa or seeds of change rice pack is also a good option)

Tahini dressing:
1 tbsp tahini
1 tbsp lemon juice
1 tbsp water
pinch of salt

Preheat the oven & get those sweet potato fries in cooking
mix together the tahini sauce
mix all ingredients above in a bowl (if you buy any other frozen items, be sure to cook those up!)
drizzle tahini dressing on your bowl & enjoy

Note: this makes one serving; if you would like to prep multiple bowls then use the entire bag of fries and be sure to have enough of ALL other ingredients.

I typically make 5 bowls using 1 bag of sweet potato fries, 1 bag of edamame and 1 bag of Hilary’s millet medley. Everything else is easy to follow measurements above to top on the bowl.
