B’s Loaded Baked Sweet Potato

Ingredients:
half sweet potato
the honest stand: cheddar style dip (hummus is also a great alternative)
sauteed kale
scallions
avocado
option: add protein like chicken

Instructions:
Preheat oven to 425. Clean potato & place on oven rack. Bake for 45 mins to 1 hour. (or bake to your preference; we all have our own ways of baking potatoes). Poke holes with fork halfway through.

Cut in half. Plate half. Warm up cheese sauce. Saute kale with oil. Chop scallions and slice an avocado. Top sweet potato with all ingredients. Drizzle with sriracha.
