Spaghetti Squash Noodles

Spaghetti Squash has become a hot alternative to traditional pasta. Packed full of nutrients and vitamins and containing only 45 calories per cup, this pasta alternative is worth a try the next time

you are craving Italian.

  • Preheat oven to 400 degrees
  • Take spaghetti squash and cut in half lengthwise with a sharp knife. You can microwave the whole squash for two minutes to make it easier to cut.
  • Clean out seeds with a spoon
  • Drizzle olive oil on inside of the squash and season with black pepper.
  • Place face down on a cookie sheet lined with foil
  • Bake for 40-45 minutes. Squash will be soft enough to shred with a fork
  • Shred squash into noodles.

Top with your favorite pasta sauce and lean meat!  You can store in the refrigerator in an air tight container for up to five days.

One Spaghetti squash will cook up enough noodles for two for a couple of meals.
