Red Quinoa Salad

Red Quinoa Salad, mexican style
handful of greens (arugula, spring mix, kale etc)
1/2 bell pepper, chopped (I mixed red and green)
chopped red onion
chopped cabbage
1/4 cup corn
1/2 cup cooked red quinoa (cooked then added olive oil, salt, black pepper, garlic powder, onion)
seasonings to taste (nutritional yeast, black pepper, etc)

dressing: homemade salsa or your favorite store bought brand

additional toppings: avocado or scoop of guac; add additional meat if needed/preferred.
