Homemade Protein Bars– Makes 8 servings
2 cups oats
½ cup natural nut butter (peanut, almond, sun-butter, cashew)
4 scoop protein powder* (I use Syntha6 Vanilla Ice Cream – Chocolate is good too)
½ cup water or unsweetened almond milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon cocoa powder or cocoa nibs
Optional additions: Stevia (to taste)
Directions:
- Line a 8X8 Pyrex Dish with wax or parchment paper
- Combine all ingredients in food processor or mix by hand in a medium sizemixing bowl
- Press mixture down into dish, using a spatula to flatten
- Freeze for appox 30 minutes. Cut into eight bars. Refrigerate.
When flattening, it can get a little sticky, so I use parchment or wax paper on the top and the bottom. After freezing, I will use a long knive or pizza cutter to cut my bars. Then, I usually keep them in the freezer. I enjoy them most when they are firm just out of the freezer.
