Featured Recipe – Santa Fe Sweet Potato

Featured Recipe: Turkey Santa Fe Baked Potato This recipe has become a favorite among meal planners, and it continues to surprise me every time I make it/eat it. It is seriously so delicious. I tend to add more onions, tomatoes, and jalapenos making the mixture overflow over the sweet potato skin and onto my plate (or let’s be real – my Tupperware dish). Recipe makes one serving. Easily multiply to make several servings.

• 1 medium sweet potatosf sweet potato1 (2)
• 2 oz lean ground turkey
• 2 TBL Canned Black Bean (Reduced Sodium)
• 2 TBL Frozen Corn
• 2 TBL Salsa
• ¼ cup diced tomato
• 1 TBL chopped onion
• ½ clove garlic • Cumin to taste
• Jalapeno to taste
• 2 TBL Reduced Fat shredded cheese

Pierce Sweet potato with a fork a few times around. Microwave on high for 5 minutes (per potato). Allow the potato to cool. Cut the potato in half horizontally and scoop it out leaving about ¼ inch thickness along the skin. In a skillet brown turkey with garlic, onion and Jalapeno (optional). Once turkey is browned add beans, corn, diced tomatoes and salsa. Season with cumin and black pepper. Simmer for 10 minutes Stuff each sweet potato with the mixture. Top with shredded cheese.
One serving is two skins.
