Black Bean Burrito
Recipe makes 1 burrito.
Using a whole can of black beans will probably make you about 4 of these! OR make a couple burritos, and save the rest of the black beans to throw on couple salads with some grilled chicken and salsa.
Ingredients:
- Whole Wheat Tortilla
- 1/3 cup black beans
- ΒΌ cup shredded cheese
- Diced onions and bell peppers
Sautee diced onion and bell pepper first until desired doneness. Add black beans and smash with fork. This helps the burrito stay intact and makes it super delicious as well. Add mixture to tortilla and top with cheese. You can add salsa here, or just bring a side of it for your dipping pleasure.
