Makes 1 or 2 servings
(Depending on hunger level and if you’ve gotten any other veggies in today )
Ingredients:
1 tbsp olive oil (halved)
1 cup riced cauliflower
Salt and pepper
Garlic seasoning
optional 1 loosely packed cup chopped kale
-Heat 1/2 tbsp oil in saucepan over medium-high heat.
-Add cauliflower and stir to coat in oil.
-sprinkle lightly to cover with salt, pepper, and garlic seasoning.
-Add second 1/2 tbsp oil if cauliflower seems super dry.
-Once rice starts to brown, add in chopped kale and stir until it wilts to your preference.
(It will wilt down very small after about 5-8 minutes.
Serve as a side dish with some salmon or as the rice in a stir fry!
