Buffalo Chicken Lettuce Wraps-Crock Pot
Stay on track with this healthy crock pot recipe for a group! Perfect for any gathering.
For the chicken
- 5 LB boneless skinless chicken breasts
- 2 stalks celery
- ½ yellow onion chopped
- 1/3 cup shredded carrots
- 1 clove garlic, chopped
- 1 cup low sodium chicken broth
- 1 cup water
- ½ cup hot cayenne pepper sauce (Frank’s)
For the Wraps
- 6 large iceberg or Bibb lettuce leaves
- ¾ cup shredded carrots
In the crock pot combine the first 7 ingredients listed under “For the chicken”. DO NOT add the cayenne pepper sauce until after the chicken is cooked. Cook on high for 4 hours, or low for 6 hours.
Remove chicken from the crock pot when cooking is complete. Reserve ½ cup of the broth (from the crock pot) and discard everything else left in the pot.
Shred the chicken with two forks and return it to the slow cooker with ½ cup reserved broth and ½ cup cayenne pepper sauce. Cook on high for 20-30 minutes.
Take a lettuce leaf and add some chicken mixture to the middle. Top with carrot shreds.
1 cup chicken mixture = one serving.
