Mashed cauliflower – aka mock mashed potatoes
Steam 1 small to medium head cauliflower, cut into florets, until very soft (I cut up a small/medium head, put it in a glass bowl with a little water, covered with plastic wrap and microwave about 10 minutes).
Then drain, pat dry, and add 4 triangles of Laughing Cow Light cheese (recommend garlic & herb cheese).
Add seasonings- salt, pepper, garlic, and chives to taste.
Mash mixture with a potato masher and then use a hand blender or food processor, to puree it to a creamy, mashed potato texture.
3/4 cup serving= 76 cals; makes about 4 servings
