Turkey Santa Fe Casserole

Nancy has a good friend who took the Turkey Santa Fe Sweet Potato recipe and converted it into an easy casserole. So many tasty ingredients make this a go-to recipe for Nancy!

Ingredients
20 oz. ground turkey (97% or 99% lean)
2 small sweet potatoes
1 can black beans (reduced sodium)
1/2 cup frozen corn
½ yellow onion (chopped)
1 clove garlic
1 can Rotel original
Reduced fat Shredded Cheese

Directions
• Preheat oven to 400 degrees
• Brown ground turkey with onion, garlic & Rotel until cooked all the way through.
• Peel and chop up sweet potatoes into ½ inch pieces cubes
• Add sweet potatoes, black beans & corn to turkey mixture
• Put ingredients into a 9×13 pan sprayed with non-stick spray
• Bake at 400 degrees for 35 minutes or until sweet potatoes are soft
• Top each serving with 1 TBL Reduced fat shredded cheese
