McBrides Stuffed Bell Pepper


  • 16 oz. ground turkey
  • 4 red, yellow or green pepper
  • 1/2 cup cooked brown rice
  • 1/2 yellow onion
  • 1 TBL chopped garlic
  • 1 cup Classico Spicy Tomato Basil Pasta Sauce
  • seasoning (Italian seasoning, basil or oregano work great, use a mixture if you like.).

Preheat oven to 350 degrees

Wrap pepper in aluminum foil and place in a baking dish.  Bake 15 minutes and remove from oven.

In a skillet, sauté onions and garlic until fragrant in a small amount of water (about 2 minutes).

Add ground turkey and cook all the way through.  Add your seasoning while turkey is cooking and tomato sauce once the turkey is done.

Add cooked brown rice to mixture (I use the microwave ready made packets for easy brown rice)

Stuff pepper with turkey mixture and rice, place in baking dish uncovered and bake an additional 15 minutes.
