Pasta with a Twist
1/2 red onion chopped
1-2 tablespoons minced garlic
2 small zucchini, chopped
1 red bell pepper, chopped
2 8oz bags of Banza penne (or another noodle of choice)
1 1/2 teaspoons red curry paste
2 cans diced tomatoes (1 can can be fire roasted tomatoes for some added heat)
1 cup unsweetened canned coconut milk
1/2 cup frozen peas
black pepper to taste
Add: vegan sausage or chicken or another meat you prefer for some additional protein/flavor

Heat oil in a large pot. Sauté onion then add the garlic, zucchini and bell pepper. Cook for a few minutes.

Add remaining ingredients to the pot. Cook for about 15 minutes on medium heat. Uncovered and stirring occasionally. Enjoy!
