Ingredients:
1 tablespoon olive oil
1 onion, diced
1 packet taco seasoning (homemade option below)
2-3 cloves garlic
1/2 teaspoon black pepper
1 (70z) can green chiles
4 cups vegetable broth
1 (14oz) can black beans rinsed & drained
2 (14oz) can garbanzo beans, rinsed & drained
1 (14oz) can kidney beans, drained & rinsed
1 (14oz) can fire roasted crushed tomatoes
2 cups frozen corn
Toppings:
lime, juiced
handful of vegan cheddar cheese
avocado, sliced
red onion, sliced
jalapeƱos, chopped
cilantro, chopped
- Heat olive oil over medium to medium high heat in pot. Saute onion.
- Add taco seasoning, garlic, black pepper & mix together.
- Add green chiles and broth. Let in come to a subtle boil. Stir in beans and tomatoes. Simmer on low uncovered for 30 minutes.
- Stir in frozen corn and let it heat through.
- Add pepper & salt if needed.
- Serve in bowls. Add desired toppings, suggestions above.
