One Pot Taco Soup

Ingredients:
1 tablespoon olive oil
1 onion, diced
1 packet taco seasoning (homemade option below)
2-3 cloves garlic
1/2 teaspoon black pepper
1 (70z) can green chiles
4 cups vegetable broth
1 (14oz) can black beans rinsed & drained
2 (14oz) can garbanzo beans, rinsed & drained
1 (14oz) can kidney beans, drained & rinsed
1 (14oz) can fire roasted crushed tomatoes
2 cups frozen corn

Toppings:
lime, juiced
handful of vegan cheddar cheese
avocado, sliced
red onion, sliced
jalapeƱos, chopped
cilantro, chopped

  1. Heat olive oil over medium to medium high heat in pot. Saute onion.
  2. Add taco seasoning, garlic, black pepper & mix together.
  3. Add green chiles and broth. Let in come to a subtle boil. Stir in beans and tomatoes. Simmer on low uncovered for 30 minutes.
  4. Stir in frozen corn and let it heat through.
  5. Add pepper & salt if needed.
  6. Serve in bowls. Add desired toppings, suggestions above.
