Crockpot veggie soup.

Huge fan of soup! Even bigger fan of set it and forget it meals! Being a busy Mom means sometimes it’s difficult to get dinner on the table and it sure feels good to be able to just walk in the door and eat! I got this recipe from @thefitish. Feel free to add some lean Italian sausage or shredded chicken for more protein.

8 cups veggie stock
14 oz can fire roasted diced tomatos
1 white potato
1 can green peas
1 cup dried lentils
2 cups fresh spinach
4 large carrots
2 stalks celery
1 onion
1 shallot
3 garlic cloves
1/4 tbsp cayenne pepper
1/2 tbsp thyme
1 tbsp cumin
1/2 tbsp smoked paprika
1 bay leaf
1/2 tbsp pepper
2 tbsp salt
1 tbsp red wine vinegar

Dice veggies and add all ingredients to your slow cooker except for the spinach and stir. Cook on high 5 hours. Add spinach the last 20 minutes. Top with goat cheese. Make the kids do the dishes. Enjoy.
