Chicken and Bacon Pasta Bake

Tomato sauce:
1 tin of chopped tomatoes.
Handful of Basil.
20g of grated Parmesan.
Splash of Worcestershire sauce.
Tsp of red wine vinegar.
Salt & pepper.
3 cloves of garlic – chopped.
1 sweet red pepper – chopped.
75ml of single cream. .
300g of uncooked penne pasta.
1 cal olive oil spray.
400g of chicken breast – diced.
4 pieces of bacon – chopped.
1 zucchini – chopped.
Tbsp of oregano
40g of Parmesan.
optional: add onion


Boil large saucepan of water and cook pasta for 8 mins.
Blend all tomato sauce ingredients together, careful not too over-blend them.
Heat frying pan and add a few sprays of olive oil spray.
Add chicken and fry for 5 mins.
Then add bacon and fry for another 4-5 mins.
Add zucchini and fry until it starts to wilt slightly then add tomato sauce.
Bring the sauce to a simmer and cook for 10 mins.
Remove from heat and add pasta.
Stir the pasta into the sauce and transfer to a large baking dish.
Top the pasta with remaining grated Parmesan and grill for 5-10 mins.

If you’d like to adjust the carbs just take away some of the pasta! Feel free to substitute turkey bacon and change out the pasta.
