B’s Avocado Kale Pesto

Ingredients

2 ripe avocados
handful of basil (I go big here, cause I LOVE basil)
3 tsp minced garlic
2 tables lemon juice
1/2 cup pine nut
1/2 cup olive oil
1/2-1 tsp salt
2 tsp black pepper
2 big kale leaves

Directions:  Take all the ingredients and throw them in a food processor. Give yourself a taste to see if you need to add more basil or seasonings. This makes 4-6 servings of sauce.

Top on some zoodles or your favorite healthy pasta noodle. I love to spiralize zucchini (which you can buy if you don’t have a spiralizer). I also love to use eatbanza noodles.
