Banza A La Brittany

Ingredients: 
1 box banza spaghetti noodles
2 tbsp vegan butter (reg butter ok too)
1/2 c olive oil
2-3 tsp minced garlic
2 big handfuls arugula
1-2 tsp crushed red pepper
1 tsp black pepper
1/4 tsp salt
Optional garnish: Pine nuts & Manchego cheese

Directions:
Boil pot of water & cook noodles as directed on box. Once noodles are almost done, heat the butter, oil & minced garlic in a pot on medium-high heat. Turn off once sauce boils or garlic starts to brown. (You don’t want burnt garlic!)

Toss noodles, sauce, arugula, crushed red pepper, black pepper & salt. Then top with pine nuts & grated cheese. Enjoy!
