ShayShay Veggie Chili

2 cups chopped carrots
2 small chopped zucchini
1 cup cauliflower rice
1/2 chopped kale
1 lg sweet potato
1/2 cup chopped mushrooms
1 cup various colored bell peppers
1/2 medium onion chopped fine
1 can diced tomatoes drained
2 cans chickpeas
1tbsp minced garlic
2-4 cups vegetable broth

Chop vegetables to similar size and combine in your crockpot on high for 4-5 hours or until veggies are soft (sweet potatoes take the longest, so check those).
I like a hearty soup so smaller pieces with less broth.  I added broth until it just covers everything.
The cool thing is you can customize it.  This was my first attempt at a vegetable crockpot soup, and with no recipe or guidance, it turned out to be a new staple in my fridge, especially during these cold months!  Add or remove veggies to your liking but not the chickpeas because that’s your protein.
