Krazy Kale & Quinoa Salad

1 bunch of kale, chopped (or broken into bite size pieces if you don’t want to chop it)
¼ red onion, chopped
1 bell pepper, diced (I typically do about half of a orange and half of a red)
½ cucumber, diced
optional: hemp seeds & black pepper to your liking
optional: avocado slices
Follow the instructions on your bag/box you buy. I typically always rinse the quinoa before cooking. Once cooked, add olive oil, garlic powder, dried basil, salt & black pepper to taste.  Just gives you a little extra flavor!  But you can always opt this out because the quinoa will be tossed into your salad.

Take a serving bowl and add all the above ingredients.

I love to take a lime, squeeze the juice on top with some avocado oil.  And add about a tablespoon of hummus.  Makes for a delicious dressing!
