Homemade Protein Bars

Featured Recipe:  Homemade Protein Bars

Makes 8 servings

2 cups oats
½ cup natural nut butter (peanut, almond, sun-butter, cashew)
4 scoop protein powder* (may substitute 2/3 -1 cup non-fat dry milk powder)
½ cup water or unsweetened almond milk
Optional additions: Stevia (to taste)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon cocoa powder or cocoa nibs

1. Line a 8X8 Pyrex Dish with wax or parchment paper
2. Combine all ingredients in food processor or mix by hand in a medium size mixing bowl
3. Press mixture down into dish, using a spatula to flatten
4. Freeze for appox 30 minutes. Cut into eight bars. Refrigerate.

*Protein powder- whey/casein blend with less than 100 calories & at least 12 gm protein per scoop; suggest “all natural” brand with limited/no artificial flavors, colors, sweeteners added
