Avocado Egg Breakfast Toast


2 Slices Whole Wheat Toast (Mine was 40 cal. a slice.)
1 Large Egg 2 Egg Whites 1/4 C.
Low Fat Cottage Cheese
1 Medium Avocado,
Pitted & Halved
Salt & Pepper to Taste Additional
Suggested Toppings: Sriracha or Hot Sauce, Laughing Cow Cheese Spread, Pickled Jalapeño Slices… etc!

Directions: Toast your toast to your liking. Lightly coat the inside of a small pan with non-stick cooking spray. Combine the egg, egg whites and cottage cheese together in the pan and cook over medium-heat to scramble. Season with salt & pepper and set aside to cool slightly Mash the avocado in a small bowl. Top each slice of toast with half of the mashed avocado and half of the scrambled egg mixture.

Give it a little drizzle of sriracha (hot sauce or rooster sauce) if you’re feeling spunky.  Enjoy.
